Great clip! I have had okonomiyaki in Hiroshima and Osaka the debate of which is best is undecided for me, but maybe I tend to lean for Hiroshima, with oysters. Also in Fukuoka where I lived for years. This looks absolutely great. I love mountain potato, which is translated to "long potato" in the clip. It is not a potato, it is a variant of yam root, very sticky, but delicious. Have made many gratins with this. One day I hope to get up to Ishikawa and hopefully visit the restaurant. Arigato!
On my bucket list, Japan is number one country to visit. Food looks just incredible, everything is so nice and clean and people are exceptionally polite.
I made four deployments to Misawa Japan and loved the local cuisine. Yakisoba is a favorite of mine! I haven't found anything comparable in my area of US.
It's like magic watching them make all these dishes with ease. As an American, I don't know what a lot of the items are but they all look delicious. It is easy to see why this restaurant is a popular place for a good meal.
